Sous Vide Cuisine, by Joan Roca and Salvador Brugu├ęs is available for purchase. This is the book Jeffrey Steingarten picked up in Spain and mentions in his sous vide article. Alas, it's $169.95. That's a lot of money, but it comes with figures, and flowcharts, and boxes and has a foreword by WD-50 chef Wylie Dufresne.
